Per sbattere bene la mousse ci vorrebbe una macchina apposita, ma con un po&#8217; di pazienza si possono utilizzare anche le <a href=\"https:\/\/amzn.to\/3U0rGGe\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">fruste elettriche<\/a>.<\/p>\n\n\n\n<p>Fare bollire <strong>200 grammi di marsala<\/strong>, versarlo caldo su <strong>5 tuorli d&#8217;uovo<\/strong> freschissimi (circa 200 grammi) precedentemente sbattuti con <strong>100 grammi di zucchero<\/strong>. Sempre mescolando portare la crema a 78\u00b0-80\u00b0 (non superare questa temperatura per evitare che lo zabaione si &#8216;strappi&#8217;) e poi lasciarla raffreddare.<\/p>\n\n\n\n<p>Preparare una seconda dose di zabaione sempre con <strong>200 grammi di marsala<\/strong>, <strong>5 tuorli d&#8217;uovo<\/strong> e <strong>100 grammi di zucchero<\/strong>, lasciarlo raffreddare per qualche minuto, poi versarlo in un contenitore e montarlo per 10 minuti con un mixer dotato di fruste, in modo che diventi molto spumoso.<\/p>\n\n\n\n<p>Mescolare poi (o nel frattempo) <strong>200 grammi di cioccolato fondente all&#8217;80%<\/strong> fuso a 45\u00b0 con lo zabaione al marsala freddo preparato per primo (circa 200 grammi) e <strong>400 grammi di panna semi-montata<\/strong>.<\/p>\n\n\n\n<p>Mescolare bene delicatamente dal basso verso l&#8217;alto e versare il composto in stampini di silicone che verranno poi messi in freezer per 5 minuti. Poi sformare le formine e porre ognuna di esse sul fondo in una piccola terrina insieme a <strong>biscotti alle nocciole<\/strong> oppure biscotti <strong>savoiardi<\/strong>, poi coprire la formina con tre mestolini dello zabaione montato (ancora tiepido).
